This experience offers more than a cooking class — it’s a deep dive into the culinary heart of Kanazawa. Located just a few minutes from Kanazawa Station, the school has been teaching Japanese cuisine for over half a century.

Led by a certified professional chef trained in Osaka and Kanazawa, you’ll learn to prepare five traditional dishes using premium ingredients and real techniques, all in a welcoming, interactive setting.

What You’ll Make

  • Pressed Sushi (Oshizushi): Made with premium sashimi from Omicho Market, known for serving Michelin-starred chefs.
  • Jibuni (Kanazawa Local Dish): A savory duck or chicken stew in dashi sauce with vegetables and fu (wheat gluten cake).
  • Fluffy Dashi Omelet: Lightly rolled omelet infused with umami-rich broth.
  • Seasonal Side Dishes & Miso Soup: Traditional accompaniments using local ingredients.

Dietary Restrictions

This class is not fully vegetarian or vegan, but limited substitutions can be made:

  • Sashimi can be replaced with egg or vegetables
  • Chicken can be substituted with tofu or vegetables

  • We use traditional bonito-based dashi (fish flakes), which cannot be replaced.
