Ramen is more than just a comfort food in Japan—it’s a national obsession. In this class, you’ll experience ramen like never before by making it yourself from scratch, using Nagoya’s regional specialty: aka-miso.

Nagoya has long been known for its rich fermentation culture, with many producers of miso, soy sauce, and mirin dating back centuries. Aka-miso, or red miso, has a robust and savory flavor profile that pairs beautifully with ramen noodles and vegetables. It’s distinctly different from the sweeter white miso used in Kyoto, offering a heartier, more intense taste.

The experience begins with a warm welcome and a brief introduction to the ingredients and history of miso in Japanese cuisine. You’ll then move into the hands-on portion of the class, where your instructor will guide you step-by-step in preparing a flavorful ramen broth, selecting vegetables, seasoning your soup, and assembling the perfect bowl of miso ramen.
