Nagoya has long been known for its rich fermentation culture, with many producers of miso, soy sauce, and mirin dating back centuries. Aka-miso, or red miso, has a robust and savory flavor profile that pairs beautifully with ramen noodles and vegetables. It’s distinctly different from the sweeter white miso used in Kyoto, offering a heartier, more intense taste.
The experience begins with a warm welcome and a brief introduction to the ingredients and history of miso in Japanese cuisine.
