Discover the timeless art of Japanese knife-making in this hands-on beginner workshop in Kyoto. Begin by selecting your preferred knife type—Santoku (all-purpose), Deba (fish butchery), or Yanagi (slicing sashimi)—then dive into the guided sharpening process.
Learn to sharpen the blade using traditional whetstone techniques under the careful instruction of skilled professionals. Then, move on to handle fitting, attaching a beautifully grained magnolia handle using fire-heating and precise craftsmanship. The process is safe, beginner-friendly, and designed to be both educational and deeply rewarding.
The workshop also includes an explanation of Japanese knife history, plus optional personal engraving—up to 4 characters—on your knife (please request this in advance). Once completed, your knife will be safely packaged and ready for you to take home.
Note: Handle fitting uses fire and may produce smoke. Please wear clothes that you don’t mind getting smoky.
