What to Expect

This class takes place at Kimura Fresh Fish, a 400-year-old fishmonger in Kyoto’s famous Nishiki Market. You’ll learn to prepare sashimi in its purest form—starting with a whole fish.

Here’s how the workshop goes:

  1. Introduction – Meet your instructor and get a short briefing.
  2. Demonstration – Watch the expert fillet a fish with precision.
  3. Your Turn – Under careful guidance, you’ll fillet a fish yourself.
  4. Make Carpaccio & Sashimi – Use your freshly filleted fish to make two dishes.
  5. Eat What You Made – Enjoy your own sashimi and carpaccio lunch with rice.

This class offers much more than sushi rolling—it’s about mastering the basics of knife skills, fish handling, and appreciating the process of traditional Japanese cuisine.
