Menu

  • Fontana Caprese - A signature dish where happiness overflows with every spoonful

Kyushu-grown tomatoes are used in various forms: marinated, semi-dried, pickled, and pureed. Accompanied by white wine jelly from Tanushimaru's KYOHO WINERY, light mozzarella cheese mousse, and seasonal fruits/citrus, each spoonful creates a harmonious blend of happiness.

  • Appetizer - Weaving together the blessings of the season.

Seasonal appetizers are made with seasonal ingredients purchased on the day. The photo shows a delicacy featuring shima-nip, and yuzu. The individual characteristics of the ingredients delivered from producers in each region are carefully evaluated and offered in combination so that the strengths of each can be demonstrated.

  • Today's Pasta - Conveying the charm of ingredients in real time.

The day's menu is determined by pairing ingredients sourced by the chef from various regions with over ten types of pasta. The current style was born out of the desire to present the ingredients in real-time.
