  • [Longtooth Grouper Sushi] Kyushu's high-grade white fish.

    Longtooth Grouper is renowned as the highest-grade white fish in Kyushu. In general, it is considered as a winter fish, but actually this exquisite fish is available almost all through the year. Also enjoy the exquisite texture of the fish caught one by one with a fishing pole.

  • Small Rice Bowl with Sea Urchin and Salmon Roe

    Enjoy this stylish [single-bite bowl] style sushi, where a small amount of rice, equivalent to one piece of sushi, is put in a small sophisticated tableware, and topped with salmon-roe, sea urchin, and wasabi. From spring to fall, we use sea urchin from Kyushu, such as Karatsu, Amakusa, and Shikanoshima. In winter, the closed season for sea urchin, we use sea urchin from Hokkaido.
