Vinegared Beef Offal - uses rare, expensive and soft cuts of beef

It uses offal that can only be taken in small quantities from each head of cattle. Though the cuts are quite large, they're cooked to be soft and easy enough to eat that the size is not that noticeable. Yuzu citrus pepper is added to ponzu vinegar to accent the flavor.
